Onions – Something We Can’t Do Without

People often ponder what the ingredient you can’t live without is -my choice would have to be onions. Onions have been used in recipes for thousands of years. They are the second most important food crop behind tomatoes, have a universal appeal, are safely consumed by most people and are used in recipes from all over the world. They make many savory dishes better and have lots of other benefits as well. You can always get them, they store well and they are inexpensive given how long they take to grow.

Onions belong to the allium family which is the same family as garlic, leeks, shallots and chives and come in many different varieties – red, yellow, white, and green, each with their own unique flavor. Onions can be eaten raw, cooked, fried, dried or roasted. They are used to add flavor to so many things it would be pointless to start listing them here. Any recipe which combines onions, garlic and bacon for instance is a sure winner.

Onions are easy to grow in any rich well drained soil. Seeds can be sown directly but many gardeners prefer to grow them into seed raising pots then plant them into the garden when they are about half as thick as a pencil. Try planting the root end you chop off when you peel them they will grow like crazy ensuring an ongoing free supply. Once planted try to keep the weeds down and don’t let them dry out but essentially you just leave them until they are ready. They take about six months, which is a long time, but I’ve found that they seem to grow well when nothing else does so the ground would be vacant otherwise. You’ll know when to pick them because their leaves will wither and from my experience they seem to pop out of the ground as if to say I’m ready now. Unlike crops like tomatoes or lettuce they store well so plant as many as you like. Many people plant extra at regular intervals to ensure an ongoing supply. There are varieties available to suit different climates and different seasons, just check out what’s suitable for your area. Early settlers used wild onions to treat colds, coughs, and asthma, and to repel insects. In Chinese medicine, onions have been used to treat angina, coughs, bacterial infections and breathing problems. There is evidence around that suggests they may help prevent certain types of cancer and cardiovascular disease – these are truly the magic ingredient.

Possibly the only drawback to onions is the irritation they cause to our eyes when they are peeled and chopped. There is no end to the list of sure fire remedies for this, none of which seem to work, but lots of time and effort has been put into trying to find a “cure”. Just search the internet there are thousands of pages devoted to this – peeling with a slice of bread in your mouth to try to fend off the fumes, chopping under water, burning a candle, chewing gum and wearing goggles to list but a few. Personally I find if I run them under water once they have been peeled I seem to have less irritation as I chop. I also try to stay away from the root area until the end which also seems to minimize the effects. I have tried the burning the candle method recently with some success. But, I really don’t think anything works particularly well – each onion seems to have its own tear inducing personality.

There are lots of ingredients that people claim to be there favorite but in most cases onions are added to make the favorite ingredient a meal. They are versatile enough to be used in dips, salads, pastas, curries, casseroles are added to gravies, preserves and soups and so the list goes on. About the only thing they aren’t used in is sweets but I just did a quick internet search and turned up a Sweet Onion and Apple upside down cake – amazing!
