Gluten-Free Chicken and Potato Combo

What you need:

  • 1 bottle (12 oz) beer or root beer, at room temperature

  • 6 pcs. chicken drumsticks

  • 2 potatoes

  • 2 cloves garlic, crushed

  • 1/2 cup butter, melted then cooled

  • 1 tablespoon of brown sugar

  • 1 tablespoon chili powder

  • 2 teaspoons salt, more to taste

  • Lime wedges, for wedges

  • Olive oil, for drizzling

Mix the beer, garlic, butter, brown sugar, chili powder and salt in a large re-sealable plastic bag. Shake to mix the ingredients well. Add the drumsticks to the bag, shake to coat the mixture and seal. Put to marinate.

Microwave the potatoes on high for 5 minutes or until slightly soft. When ready, cut into 1/4-inch thick pieces lengthwise. Drizzle both sides of each potato slice with olive oil.

Place the marinated chicken and the potatoes on the pre-heated grill. Bake drumsticks until cooked through, about 20-25 minutes, basting with beer marinade occasionally. Grill the potatoes for 3 minutes per side.

Once cooked, transfer the chicken and potatoes to a plate. Sprinkle with salt and serve with lime wedges.

Gluten Free Pepper Steak with Caramelized Onions

What you need:

  • Beef rib-eye or t-bone steak (3/4 to 1 inch thick)

  • 3 onions, sliced ​​into 1/2-inch rounds

  • 2 tablespoons of honey

  • 2 tablespoons cracked peppercorns

  • 1 tablespoon olive oil

  • 1 1/2 teaspoons dried thyme leaves

  • 1 teaspoon garlic salt

  • 1 teaspoon ground cumin

In a small bowl, mix peppercorns, thyme leaves, garlic salt and ground cumin. Brush both sides of the steak with olive oil then rub the chili mixture all over. Let stand for 15-20 minutes.

Brush the onion slices with the remaining oil. Place the steak and onions in a grill pan and cook, covered, on a pre-heated grill at medium-high heat for 12 mins, or until the desired doneness of the steak is achieved.

When ready, remove from the heat and let the meat rest for a few minutes. Brush the onion slices with honey. Serve steak with honey onion.
